Carrot - 1 chopped
Beans - 10 or 12 chopped
Potato - 2 chopped
Cauliflower - few florets
( can add any other vegetable too)
Onion - 1 medium chopped
Tomato - 2 chopped
Chilli powder - 1 tbsp
Dhaniya powder - 1 tbsp
Garam masala powder - 1tbsp
Cilantro - few sprigs
Spices - jeera, cardamom, cinnamon, clove( all very few)
Salt as needed
Oil - 2 - 3 tbsp

Make a paste with :-

Coconut - grated 1 cup
Garlic - 3 or 4 pods
Fennel seeds - 1 tbsp
clove - 2
cinnamon - a small piece
Cashew and poppy seeds( optional)- if using then soak in water for sometime and add together and make a paste.
If you want the kurma to be little greenish then add few strigs of cilantro leaves.

Cook all the vegetables together in a pressure pan for one whistle or ... can use a microwave...wash and sprinkle some water and cook for 10 to 12 minutes.

Heat oil in a pan and add the spices + onion fry till light brown ...next add tomatoes and mash and cook...now add the powders and just mix...immediately add the ground paste and some water and allow it to boil for 3 or 4 minutes...add the cooked vegetables, salt and reduce flame and cook till the raw smell of the masala leaves...garnish with chopped cilantro... Goes well with chapathis/parathas and also with any rice varieties.
