1 BAKED VEGETABLES

This recipe is my own invention. Got it perfect after many trials. After watching many cookery show's with recipes like green bean casserole, I got an idea to try it out with all the vegetables during one Thanks Giving get together. Few days before the gathering itself, I tried it one or two times and then only got this into perfection.Since then I have tried it many times, at home, or for small get togethers ... This is an easy but very rich in taste...good for kids as they like the creamy part and with all vegetables.


Potato - 2 medium ( can use 1 baking potato)
Carrot - 1
Beans - 10 - 12
Capsicum - 1
Mushroom - 1 cup ( optional)
Zucchini - 1
Salt as needed
Pepper powder - few sprinkles
White sauce
French fried onion - a handful( can add more ..this is just for crispness)

To make white sauce:
Butter - 2 tbsp
Maida/all purpose flour - 2 tbsp
Milk - 2 cups
Salt - a pinch
Parmesan cheese - 2 - 3 tbsp

Melt butter in a sauce pan and add maida...fry/saute for 2 - 3 minutes for the raw smell to leave...add milk and reduce flame...allow it cook for few more minutes...add salt and parmesan cheese and remove...if it gets very thick...need not worry..just add one more cup of milk...

Boil potatoes 3/4th..peel and cut into thick cubes...cut other vegetables also into thick cubes...
Stir fry all the vegeables till they are 3/4th cooked...
Place all the vegetables in a baking tray( can use pyrex glass rectangular tray)....add white sauce, salt , pepper powder and mix...preheat oven to 375 degrees...place the dish in the oven and cook for 20 minutes...Keep checking....once done just remove and top it with french fried onions and place it back for another 2 - 3 minutes only and enjoy your delicious, creamier baked vegetables...This is good dish for large gatherings as a special dish/variety....and or can use a side for pasta.

this is a very simple kinda casserole dish i guess.. and the white sauce is the roux mix?? will try it some time.. have book marked it already
