2 EGG KURMA

Egg - 4
Onion - 1 medium chopped fine
Tomato - 2 chopped fine
Ginger garlic paste - 1 tbsp
Chilli powder - 1 tsp
Dhaniya powder - 1 tsp
Garam Masala powder - 1 tsp
Jeera/cumin seeds - 1/2 tbsp
Cardamom - 2
Clove - 2
Cinnamon - a small piece
Salt as needed
Oil - 1 tbsp

Grind together:

Coconut - 1/2 cup
Fennel seeds - 1 tsp
Clove - 2
Cinnmon - 1 small stick
( grind these in a mixer with little water to a fine paste)

Hard boil eggs...remove shell ...can also make few slits without reaching the yellow( yolk part) with a knife ...keep aside.


Heat oil in a pan/kadai and add jeera, cardamom, clove and cinnamon...wait for few seconds and add chopped onions... fry till they are golden brown...next add ginger garlic paste and saute for a minute...next add chopped tomatoes.. fry till they are mashed and pulpy.... next add all the powders and mix well... add the ground paste along with some water and salt....reduce flame and cook till the raw smell leaves... switch off flame and add the boiled eggs...garnish with some chopped cilantro leaves... goes well with chapathis and also with any rice variety.

you may also add poppy seeds ( soaked in hot water for 10 mins) to grind along with coconut
